Production workers in the high-pressure processing area ensure that lobster meat is removed from the shell and properly packaged and labelled for shipping.

Duties  

• Follow hygiene routine before entering HPP area
• Weigh and sort lobster tails
• Load lobster into high pressure processing machine
• Operate band saw to cut lobster tails
• Remove shells from lobster
• Remove lobster meat from claws with air hose
• Package lobster using packaging machine
• Properly label lobster for shipping
• Clean and sanitize floors and workstations
• Additional duties as required

Working Conditions  

• Damp, cool and wet, plus refrigerated area
• Wear proper equipment: rubber boots, aprons, hair nets, safety glasses
• Work repetitively with hands, wrists and elbows
